Peanut Butter Chocolate Chip Protein Banana "Bread"

Or PBCCPBB for short. Lol. I honestly don't know what you're supposed to name this, but those are all the ingredients and all of them are just so good I couldn't leave one out! This bread is amazing. It's not really bread because it's flour free, wheat free, gluten free and dairy free. And yet it bakes up like bread and has the texture of moist cake. I'm obsessed and this will be a staple in my house. It's great with a glass of milk for your nighttime snack, which should always be high protein. Make it. Love it.

PB Chocolate Chip Protein Banana "Bread": makes about 12 slices
sidenote: I already tweaked this recipe from the original, but it still needs a litte something. I've listed the recipe as is, with my suggestions  starred below. 

You need:

3 ripe bananas (mine were on the small side)

12 TBS PB2 (get some here, it's totally worth it. All the peanut butter flavor and protein with none of the calories)

1.5 scoops protein powder (I used my vanilla Sunwarrior. If you're feeling risky, go for 2 whole scoops and let me know what happens. That's what I'm going to try next)

1/4 cup ground flax seed

3 whole eggs (remember, I'm anti egg-white only. The yolks are full of so much nutrition)

2 tsp baking powder

1/2 cup greek yogurt (I used plain, but I think I would go with vanilla next time)

1/3 cup dark chocolate chips

Raw honey to taste

Cinnamon to taste

Dash of vanilla extract

* I would use at least 2 more bananas
* Add a pinch of salt

Directions:

Preheat oven to 350. Combine dry ingredients in one bowl, set aside. In blender, add bananas, yogurt, vanilla, honey and eggs. Blend until smooth. Add banana mix to dry ingredients and mix thoroughly. Add chocolate chips! Pour all ingredients into a loaf pan and bake for 30 mins. Check after 30, it may need a little longer. Mine went for probably 40 and ended up still being borderline undercooked in the center. Let cool completely, slice and serve. Mine is really good, so I can only imagine how good it's going to be with more bananas and a pinch of salt.

  2. Girl I am anti-egg white only too! I don't understand it! I'm having a tough time with clean desserts. I've tried a few of them from the ebook, but I really don't like any of them. I always have to tweak them, and they never work. You gotta let me know if you have any luck!
